Description
This indigenous grape variety was once widespread throughout Central Italy before it almost "died out" in the late 90s. For some years now, Pecorino has been experiencing a true renaissance.
Tasting Notes:
Straw yellow with golden hues. Intense notes of green tea and ripe yellow fruits, especially peach. Very well structured on the palate, long finish.
Pairs with: Seafood, fish, light fresh cheese. A lovely aperitif wine.
Ideal serving temperature: 10 – 12 °C

Vineyard area: approx. 7 – 8 Ha
Soil composition: loam and limestone mixed soils, 110 – 350 m (a.s.l.)
Grape harvest: Third decade of September, manual into small, sturdy plastic containers
Production/Hectare: approx. 5 T/Ha
Training system: Pergola system, Trellis (Guyot)
Fermentation:
After destemming the grapes and maceration at low temperature, fermentation follows at a controlled temperature.
Aging:
In stainless steel tanks
