Spread salts made from pure pork, derived from the minced meat of bacon, fresh cushion, oil, and Calabrian chili, packed in natural casing and matured for approx. 45 days. After maturation, the Nduja is packed in a glass jar, which is hot pasteurized, thus ensuring a much longer shelf life (approx. 2 years) compared to the version in casing, which is 6 months old. In the mouth, it is a champion of balance between sweetness, flavor, acidity, and spiciness, intensity, and endurance. The texture is rustic, slightly coarse, and uneven, with the presence of chili seeds, but soft, juicy, and soluble—the genuine and inimitable Nduja of Nadeln.
